His dishes were elaborate and delicious, but Lars always found them just short of perfection. Unfulfilled, he donned his traveling hat and set out to find what was missing. During his trip to Mexico, Chef Lars found himself climbing the Sierra Madres. He set up camp for the night, huddled around his campfire, and allowed the dancing flames to take him back to his hometown, reminding him of the Birchwood fires used in traditional Nordic cooking. He was then driven to achieve the Nordic ideal of Lagom, meaning balance and simplicity. Just right.[/vc_column_text][dt-list icon=”caret-right”]
